Hey Amazing Peeps! When I am screaming for ice cream, you had better believe I am going to have my way. This vegan recipe is two ingredients and beyond easy. When my bananas start to brown I peel and freeze them. My freezer is also always stocked with frozen organic mango. You could use fresh and just peel, dice into cubes and freeze over night. The recipe below is for one large portion so you can simply multiply by however many servings you need. This freezes well but does need to sit on the counter a few minutes to soften before serving. Top with berries or just enjoy as is!
- 1 Cup Frozen Mango
- 1/2 Frozen Banana
- Let banana and mango sit out for about 10 minutes to soften slightly. Add to Food Processor. Pulse a few times to break up fruit into chunks. Blend until smooth and creamy. Enjoy right away or freeze for later in a freezer container.
